It started with an obsession. We traveled from the street corners of New York to the burger joints of MalmΓΆ, chasing the perfect Maillard reaction.
In Addis, we found the final piece of the puzzle: Premium Ethiopian Highland Beef. Rich, flavorful, and never frozen. We take a loosely packed ball of this meat, throw it onto a 400Β°F chrome grill, and smash it flat with a heavy steel weight. This creates a lacey, crispy crust that seals in the juicesβflavor you simply can't get from a regular burger.
